The more accepted version of Khichuri is Bhuna Khichuri. Khichuri is deep frying and mixing spices with rice and lentil. Bhuna means braised, so Bhuna Khichuri is sort of slow cooked to infuse the flavors and the spices. Oh, the aroma while it is being prepared!
It can be cooked with beef, chicken, or even fried eggs. The most moment to have Bhuna Khichuri is when it’s raining, and you’re indoors; put on some old classic playlist, and add cola beverage for the best experience.
There’s also Patla Khichuri, which is kind of semi-liquid. Cooked with seasonal vegetables, spinach and potatoes, it can also be eaten with chicken, beef or mutton.
